Umeshu is a sweet plum infused alcoholic drink which is often made at each Japanese house hold. Typically multiple distilled plain spirit is used to marinade the fruit but Akashi-Tai Shiraume Umeshu uses ginjo grade sake.
After being marinated for 6 months the fruits are removed from the tank then Shiraume Umeshu is left to age for a further 2 years.
Nose : Dry fruit, date and plum.
Tasting : Sweet and rich dry fruits and plum flavours with a dry finish.
Serve : Over ice, with soda or hot water.
Food pairing : As aperitif or digestif.
